UK Pheni is fine, pre-roasted vermicelli that crisps quickly in a hot pan and softens just as fast once liquid is added. The strands are thin and lightly curled, so they cook through in minutes rather than needing a long simmer. This makes it a quick base for both sweet and savoury dishes. At home, pheni is most often used for kheer and sweet vermicelli puddings, where it is simmered gently in milk until tender. It also works well toasted first in a dry pan or with a little fat before adding liquid, which helps keep the strands separate rather than clumping together. Some cooks use it in place of thicker noodles for a lighter, quicker-cooking dish. Because the strands are so fine, pheni cooks fast, so it pays to keep a close eye on the pan and remove it from the heat as soon as it softens.
