Ko-Lee Rice Noodles soften quickly in hot water, turning tender and slightly springy without losing their shape. They soak up sauces and stock well, making them a reliable base for stir-fries and noodle soups. These noodles work well in a classic pad Thai, tossed with vegetables and a soy or tamarind-based sauce. They also suit quick noodle soups, added straight into hot broth with spring onion and a splash of soy sauce. For a simple stir-fry, cook the noodles first, then add them to the wok with your chosen vegetables and seasoning for the last few minutes. Each pack contains 200g of dried rice noodles, useful for portioning out into single or shared servings. Once opened, keep any unused noodles in a sealed container or resealable bag to keep them in good condition. Store in a cool, dry place away from direct sunlight until ready to cook. For best results, follow the pack instructions for soaking or boiling times, as rice noodles can turn soft quickly if left in water too long. Drain well before adding to stir-fries, so they take on the flavours of the sauce rather than diluting it.
