Heera Kalonjee are small, jet-black seeds with a firm bite and a nutty, peppery flavour that comes through best once warmed. Scatter them into hot oil or ghee and they crackle gently, releasing an earthy aroma that forms the base of many curries and vegetable dishes. These seeds are a familiar sight in home kitchens, pressed onto naan and other flatbreads before baking for a distinctive savoury top note. They also feature in pickles, lentil dals and potato or cauliflower curries, where a spoonful stirred in towards the end of cooking adds texture and a mild, slightly bitter edge. Kalonjee works well combined with other whole spices such as cumin or mustard seeds for tempering, known as tadka, where the seeds are fried briefly in oil before being poured over dal or vegetables. A light toasting in a dry pan brings out extra depth if using them in a spice mix or rub. Store the seeds in an airtight container, away from direct light and heat, to keep them in good condition for longer.
