Green cardamom pods release a burst of sweet, aromatic flavour as soon as they are cracked open in a hot pan. Ambas Foods Rajah Green Cardamom comes as whole pods, ready to add straight to your cooking. These pods are a familiar sight in Indian and South Asian kitchens. Add a few whole to simmering rice for a fragrant pilau or biryani. Crush the pods lightly and drop them into hot milk or water when brewing chai, letting the seeds infuse as the tea steeps. They also work well stirred into curries and slow-cooked dishes, adding depth as the sauce reduces. For the best flavour, lightly crush the pods just before use to release the seeds and their oils. Whole pods can also be left in a dish during cooking and removed before serving, or left in for guests to spot and set aside.
