Goond khatira is an edible gum sold as small hard crystals or chips, ranging from pale amber to golden in colour. The pieces are dry, brittle and glass-like until cooked, when they soften and puff up. In home cooking, the crystals are typically fried briefly in ghee until they swell and turn opaque. This makes them a familiar addition to laddus, panjiri and other traditional sweet mixes, where the puffed gum adds a light, crunchy texture once combined with nuts, seeds and sweetened bases. It is also stirred into warming winter preparations alongside other spices and dried ingredients. Before use, sort through the crystals and remove any larger or uneven pieces so they cook evenly. Fry in small batches over a gentle heat, as the gum expands quickly and can catch if the pan is too hot. Once puffed, drain off any excess ghee and allow the pieces to cool before mixing into your chosen recipe. Store goond khatira in an airtight container, away from direct sunlight and moisture, to keep the crystals dry and crisp. Kept this way, it remains ready to use whenever you plan to prepare laddus, panjiri or similar traditional dishes at home.
