Buitoni Penne Rigate is a ridged tube pasta, cut on the diagonal at each end. The ridges and hollow centre are designed to hold onto sauce, giving a good bite once cooked. This shape works well with thicker, chunkier sauces that cling to the ridges, such as a tomato and vegetable ragu, a creamy mushroom sauce or a simple arrabbiata. It also holds its shape in baked pasta dishes, so it's a good choice for a penne bake with cheese sauce, or for tossing through a warm pasta salad. Cook in a large pan of boiling water until al dente, then drain and combine with your chosen sauce while still warm so it absorbs the flavours. Keep any dry, uncooked pasta in a cool, dry cupboard in its packaging or an airtight container until you're ready to cook it.
