This 400g pack of whole cumin seeds is a handy size for a household that cooks curries, dals or spiced rice on a regular basis. A few teaspoons go a long way, so one pack tends to last through weeks of regular cooking. Cumin seeds have a warm, earthy aroma that comes through best when they are toasted or fried whole rather than used ground. The seeds keep their shape and crunch during cooking, releasing their flavour gradually as heat is applied. At home, whole cumin is often the first thing into the pan for a tarka or tempering, sizzled briefly in hot oil or ghee before onions, garlic and other spices are added. It works well scattered into dals, curries and soups, or dry-roasted and lightly crushed to season roast vegetables, potatoes and rice dishes such as jeera rice. A pinch added to bread doughs or spiced flatbreads also gives a subtle, nutty note. Keep the pack sealed and stored in a cool, dark cupboard once opened, away from direct heat or sunlight, to help the seeds hold onto their aroma for longer. A small spoon or shaker makes it easier to measure out what is needed each time without exposing the rest of the pack to air.
