Garam masala is best known for finishing a good curry, stirred in at the end of cooking to lift the whole dish. It is a warming spice blend from the Herbs & Spices range, ground to a fine, aromatic powder with a rich, rounded flavour. Cooks reach for garam masala in everyday dishes such as chicken curry, lamb rogan josh, dal and vegetable curries. It works well sprinkled over rice dishes like biryani or pilau, and it is often used to season kebabs, mince dishes and spiced potatoes. A small pinch added towards the end of cooking, rather than at the start, helps keep its aroma strong and prevents the flavour from cooking away.
