This 40g pack of Rajah Red Chilli Whole is a handy store-cupboard size, easily lasting a busy kitchen through weeks of regular cooking. Whole dried red chillies keep their heat and colour well, ready to be reached for whenever a dish needs a lift. Use them whole to flavour oils for tempering dals, drop a few into simmering curries and stews for background heat, or add to pickles and chutneys for extra bite. Crush or crumble them by hand for a stronger, more even heat through rice dishes, stir-fries and marinades. For a milder result, leave the chillies whole and remove them before serving. Store the pack in a cool, dry cupboard away from direct sunlight to keep the chillies at their best. Once opened, transfer any unused chillies to an airtight container or jar to keep them fresh and ready for the next batch of cooking.
