Zafraan ponk salt is best known for lifting biryanis, pulaos and saffron rice with its warm colour and gentle aroma. It is a fine-grained pink salt from the Herbs & Spices range, designed to bring a subtle saffron character to everyday cooking. Home cooks use it to season rice dishes, curries and slow-cooked meats, stirring a pinch through at the start of cooking so the colour and aroma spread evenly. It also works well finished over roasted vegetables or scattered on flatbreads just before serving, giving dishes a warm golden-pink hue. A little goes a long way, so add it gradually and taste as you go. Keep the jar tightly sealed in a cool, dry cupboard away from direct sunlight to help the colour and aroma last. Use a dry spoon each time to keep the salt free-flowing and avoid clumping.
