Sultan Bay Leaves hold their shape and colour through long, slow cooking, releasing their fragrance gradually rather than all at once. Add them early to a stew or casserole and they keep working right through to the end of cooking, quietly building flavour in the background. These are a storecupboard basic for real home cooking. Drop a leaf or two into a pot of rice as it simmers, tuck one into a pan of stock, or add to a curry, dhal or braise alongside the other spices. They also work well in a poaching liquid for chicken or fish, and in a slow-cooked ragu or bolognese. Bay leaves are tough and don't soften much, so they're not meant to be eaten. Fish them out before serving, especially from soups, stews and rice dishes where they can otherwise go unnoticed. Keep Sultan Bay Leaves in a sealed container, away from direct light and heat, to preserve their aroma for longer. A cool, dry cupboard is ideal. Whole leaves keep their fragrance for longer than crushed ones, so add them whole and remove after cooking rather than crumbling them into the pot.
