Dealicious Tukmaria seeds are small, dark oval seeds with a mild, neutral flavour. They are sold whole and dry, ready to soak before use. Soaked in water, the seeds swell and develop a soft, gelatinous coating around a firm centre. This texture is the reason they are used in falooda, milkshakes and fruit sherbets, where they add a distinctive bite to cold drinks and desserts. To prepare, soak a spoonful of seeds in water for around ten minutes until they plump up and turn translucent. Drain any excess water before stirring them through drinks, syrups or dessert bases. They can also be added directly to fruit salads or yoghurt once softened. Store the seeds in a cool, dry place in a sealed container to keep them in good condition. Keep them away from damp, as moisture will cause them to swell prematurely. Once soaked, use them the same day for the best texture.
