Gond Katira is a store cupboard staple for anyone who makes cooling sherbets, falooda or milk-based puddings at home. Reached for by cooks preparing traditional summer drinks and desserts, it comes as small, hard, translucent pieces that transform once soaked. Soak the pieces in water for several hours, or overnight, until they swell into a soft, jelly-like texture. This is then stirred into sweetened milk, rose syrup or fruit drinks, or folded through desserts such as falooda and kheer. Many home cooks prepare a batch in advance and keep it soaking in the fridge, ready to spoon into drinks as needed. Store the unsoaked pieces in a cool, dry cupboard away from moisture, in a sealed container or jar. Once soaked, keep any leftover gond katira in the fridge and use within a few days. A little goes a long way once it has swollen, so start with a small amount and add more to taste when making drinks or desserts.
