Indus Urid Dal Wash is a split pulse with a pale cream colour and a smooth, small grain. Sold in a 500g pack, it has a mild, earthy flavour and a soft texture once cooked, making it a versatile store-cupboard pulse. This dal is a familiar base for home cooking. It works well in a simple urid dal curry, simmered with onions, garlic and spices until thick and creamy. It is also the classic pulse used for making idli and dosa batter, giving the fermented mixture its characteristic lightness. Some cooks use it to prepare vadas, shaping the ground dal into small fritters before frying. Before cooking, rinse the dal thoroughly under cold water until the water runs clear.
