Anyone cooking a weeknight dal reaches for chana dal first. These are split, skinned chickpeas, small and golden, with a firm bite that holds its shape once cooked. The 2kg bag suits households that cook pulses regularly rather than the odd occasion. Chana dal is the base for classic dal recipes, simmered with turmeric, garlic and chilli until soft. It works equally well in a chana dal curry served with rice or roti, or added to vegetable stews for extra body. Before cooking, rinse the dal a few times until the water runs clear, then soak for a couple of hours to shorten the cooking time.
