Heera Horse Gram is a small, whole brown pulse with a firm, oval shape and a dense bite once cooked. Sold here in a 1.5kg pack, it holds its shape well during long, slow cooking, making it a versatile store-cupboard staple for Indian-style cooking. Horse gram is a familiar ingredient in South Indian kitchens, where it is simmered into hearty dals, added to rasam, or cooked down into thick, spiced curries. It can also be sprouted and used in salads, or boiled and tossed into a simple sundal with mustard seeds and curry leaves. Its firm texture means it keeps its bite even after extended simmering, so it works well in slow-cooked pots and one-pan dishes alike. Before cooking, soak the pulses for several hours or overnight to soften them and shorten the cooking time. Rinse well before soaking and again before use. Once cooked, horse gram can be stored in the fridge for a few days and reheated gently on the hob. Keep the dry pulses in a cool, dry cupboard in a sealed container away from moisture. This helps maintain their texture and makes them easy to portion out as needed for curries, soups or sprouting whenever a recipe calls for them.
