Soghaat Kasuri Methi is best known for lifting butter chicken and dals with its distinctive dried herb aroma. This 100g pack contains dried fenugreek leaves, a store-cupboard staple in Indian and Pakistani cooking. The leaves are small, dry and deep green, with a strong, slightly bitter fragrance that mellows once cooked. Crumbled between the fingers, they release their full aroma before going into the pot. At home, cooks add kasuri methi to curries such as butter chicken, methi malai murgh and paneer dishes, stirring it in towards the end of cooking. It also works well scattered over parathas, naan dough or vegetable sabzis for extra depth. A pinch goes a long way, so add gradually and taste as you go. Keep the pack sealed and store it in a cool, dry cupboard away from direct sunlight. This helps the leaves stay dry and keeps their aroma intact for longer.
