Drop these whole dried chillies into hot oil and they darken and crackle within seconds, releasing a deep, smoky heat into the pan. Heera Whole Long Chili comes in a 25g pack, ready to use straight from the tub. Each pod is long, dried and firm, with a good level of heat that builds steadily rather than hitting all at once. Whole chillies like these are a store-cupboard basics for Indian and South Asian cooking. Fry them in oil or ghee with cumin seeds and mustard seeds to make a tempering for dal, then pour it over the finished dish. Add a whole chilli or two to curries, rice dishes and pickles for background heat without breaking the pod down completely. They also work well simmered whole in stocks and gravies, then removed before serving if a milder result is preferred. Keep the pack sealed and stored in a cool, dark cupboard to help the chillies hold their heat and colour for longer. Use whole for a milder, more even warmth through a dish, or crush them by hand for a stronger, more immediate kick. A small handful goes a long way, so add gradually and taste as you cook.
