Crushed chilli flakes scatter easily over a hot pan, releasing colour and warmth as they cook. The coarse texture means each flake holds its bite, whether stirred into oil at the start of cooking or sprinkled on at the table. This is dried crushed chilli, sold loose in flake form rather than ground to a fine powder. The pieces are visible and uneven, giving a rustic look and a gradual heat that builds rather than overwhelms. It keeps its colour and crunch well when stored properly. Use it to season pasta dishes, particularly a simple arrabbiata or an oil-based spaghetti aglio e olio.
