Dried fenugreek leaves, crumbled and ready to use straight from the pack. Dark green in colour with a distinct, slightly bitter aroma that mellows once cooked. Sold in a 100g pack, this is kasuri methi, a store cupboard staple in Indian cooking. Use it to finish curries such as methi chicken, methi malai matar or butter chicken, crumbling a pinch between your fingers over the pan towards the end of cooking. It also works well stirred into dough for parathas, or added to dals and vegetable sabzis for extra depth. A little goes a long way, so add in small amounts and taste as you go. Keep the pack sealed in a cool, dry place away from direct sunlight to preserve its aroma and colour for longer.
