Home cooks reach for desi gur when a recipe calls for something richer than white sugar. This 1kg block of gur is a solid, unrefined cane sugar, deep amber in colour, with a firm, slightly sticky texture that can be broken into chunks or grated as needed. Gur is a store-cupboard staple in South Asian kitchens. It goes into a cup of gur wali chai for a warmer, more rounded sweetness than sugar gives. Cooks stir it into rice pudding, halwa and other traditional sweets, or melt it down for jaggery syrup used in desserts. A small piece is often eaten alongside roti or paired with peanuts as a simple, everyday treat. To use, break off a piece from the block with a knife or heavy object, then grate or chop it finely so it dissolves evenly in hot liquids or batters. Larger pieces take longer to melt, so smaller pieces work better for tea and quick recipes. Store the block in an airtight container in a cool, dry place, away from direct sunlight. This keeps it firm and stops it turning soft or sticky. Once opened, reseal tightly between uses so it stays easy to cut and grate for the next dish.
