Dealicious Desi Shakkar is a granular, unrefined cane sugar with a warm golden colour and a coarse, slightly moist texture. It has a rounded, earthy sweetness that is less sharp than refined white sugar, with a natural molasses note running through it. In home kitchens, desi shakkar is stirred into hot milk or tea for a deeper sweetness, melted into ghee for making halwa, or mixed into the filling for stuffed parathas. It is also worked into laddoo mixtures and used to sweeten porridge or semolina-based puddings such as sooji ka halwa. Because the grains are coarse, shakkar dissolves best in warm liquids or when gently heated with ghee or butter before other ingredients are added. Keep it in a sealed container in a cool, dry place, as it can clump if exposed to moisture. Break up any lumps with a spoon or rolling pin before use.
