Pasand Pesi Gur is a solid block of unrefined cane sugar, sold in a 1kg pack. It has a dense, firm texture that can be grated, chopped or broken into pieces before use, with a deep amber colour and rich, molasses-like character. Gur is a store-cupboard staple in South Asian cooking. Use it to sweeten tea, or melt it down for classic dishes such as gur ka halwa, til gur ladoo or gur wale chawal. It also works well stirred through hot milk or added to slow-cooked lentil dishes for a rounded sweetness. Break off the amount you need with a sharp knife or grater, as gur can be tough to cut in one piece once set. Store the block in an airtight container in a cool, dry place to keep it firm and prevent it from softening or sticking together.
