Alam Sons Gur breaks down easily in a warm pan, melting into a smooth, dark syrup rather than seizing or clumping. Dissolve a small block in hot milk or water and it disperses fully within minutes, ready to sweeten drinks or desserts. This is a solid block of gur, sold in a 500g pack, distinct from refined white sugar. It works well stirred into tea to make a traditional gur wali chai, or melted down as the base for sweets and halwa. Many cooks also use it in place of sugar when making kheer or other milk-based puddings, giving a deeper, more rounded sweetness than white sugar. To use, break off the amount you need with a sharp knife or the back of a spoon, as the block is firm at room temperature. Add it early to hot liquids so it has time to melt through fully. Any unused gur should be wrapped tightly and kept in a cool, dry place, away from moisture, which can cause it to soften or turn sticky.
