Methi seeds soften and release a warm, slightly bitter aroma as soon as they hit hot oil, making them a key step in many South Asian dishes. These are small, hard, angular seeds with a mustard-yellow to amber colour, sold here in a 400g pack. Fenugreek seeds like these are used whole in tempering, or tadka, for dals and vegetable curries, added to hot oil or ghee at the start of cooking along with mustard seeds or cumin. They also feature in pickles, spice blends and some bread and paratha recipes, where a small amount goes a long way. Toasting the seeds briefly before grinding brings out a deeper, nuttier flavour, useful for homemade spice mixes. Take care not to overcook the seeds, as they turn bitter if burnt rather than lightly toasted. A short soak in water can soften them for recipes that call for a milder, more rounded flavour rather than the sharper taste of the dry seed. Keep the pack sealed once opened and store in a cool, dry place away from direct light. Kept this way, the seeds will hold their flavour and aroma for cooking over time. A small jar or airtight container is a practical way to decant them for everyday use in the kitchen.
