Methi seeds turn fragrant within seconds of hitting hot oil, releasing a warm, slightly bitter aroma that mellows as it cooks. These small, hard, amber-brown seeds hold their shape well, softening only after a good soak or a long simmer. Methi seeds are a store cupboard staple in Indian cooking. They're used whole in tempering, dropped into hot oil or ghee at the start of a dal or curry to build a deep, savoury base. They also feature in pickles, spice blends and some bread doughs, where their slight bitterness balances richer, sweeter flavours. For everyday cooking, add a small pinch to hot oil before your onions and garlic go in, letting the seeds sizzle for a few seconds until they darken slightly. Take care not to let them burn, as this makes them taste harsh. Some cooks soak the seeds overnight before adding them to curries or pickles, which softens their texture and tempers their bitterness. Store methi seeds in a cool, dry place, in a sealed container away from direct light. Kept this way, they stay useful for tempering and pickling for a good length of time. A small jar goes a long way, as only a few seeds are needed to flavour a dish.
