Hot N Sour Noodles cook to a firm, springy bite once dropped into boiling water. The strands loosen quickly as they heat, ready to soak up whatever sauce or stock goes into the pan. Drained well, they hold their shape rather than turning mushy, which makes them easy to toss through a wok or stir into a simmering broth. These noodles suit a proper hot and sour stir-fry, tossed with vegetables and a splash of vinegar and chilli for that classic sharp, warming finish. They work equally well dropped into a hot and sour soup, where they soak up the tangy broth without falling apart. For a quicker plate, stir them through with whatever protein or vegetables are to hand and finish with the sauce of your choice. Cook the noodles in plenty of boiling water until just tender, then drain thoroughly before adding to a pan or wok.
