Soghaat Mustard Oil heats quickly in the pan and carries a strong, pungent aroma that mellows once cooked through. It has a deep amber colour and a sharp, distinctive taste that sets it apart from milder cooking oils. This oil is a familiar base for Indian and Bangladeshi cooking. Use it for tempering spices at the start of a curry, for frying onions and garlic, or for cooking fish and vegetable dishes where a robust flavour is wanted. It is also commonly used in pickles, where its strong taste helps carry the spice mix. For best results, heat the oil until it just starts to smoke before adding whole spices, then let it cool slightly before adding other ingredients. This softens the raw sharpness and brings out a nuttier, rounder flavour in the finished dish. Store the bottle in a cool, dark cupboard away from direct sunlight, and keep the cap tightly closed after use. Give the bottle a shake before pouring, as the oil can settle over time. A little goes a long way, so measure it out carefully when following a recipe.
