Shan Meat Tenderizer rubs easily into raw meat, working through the fibres to help cuts soften as they cook. Mixed into a marinade, it blends smoothly with little effort, leaving no lumps behind. This is a spice mix designed to be worked into meat before cooking, whether that is diced beef, lamb chunks or chicken pieces. Rub it in by hand, leave the meat to sit, then cook as normal in a curry, on the grill or in the oven. It suits dishes where meat needs to cook down to a soft, tender result, such as karahi, kebabs or a slow-cooked curry. For best results, work the tenderizer evenly over the meat so every piece is coated, then leave it to rest before cooking rather than adding it straight to the pan.
