Pasan Kala chana are tinned black chickpeas, smaller and firmer than the pale variety, with a dense, nutty bite. They come ready-cooked in the tin, so there's no soaking or lengthy simmering needed before use. Kala chana are a familiar base for home-style curries, simmered with onions, tomatoes and everyday spices for a hearty chana masala.
