Heera Whole Round Chilli is best known for adding fiery heat to dals and curries, where a few whole pods go into hot oil at the start of cooking. This pack contains whole dried round chillies, ready to use straight from the bag. These chillies work well in everyday Indian cooking. Drop them into hot oil or ghee with cumin seeds and mustard seeds for a tempering, or tadka, poured over dal, rice or vegetable curries. They can also be added whole to curries and stews as they cook, giving a steady background heat without the need to chop or deseed. For a milder result, remove the chillies before serving, or leave them in the dish for extra warmth and let diners push them aside. Whole chillies can also be dry roasted briefly in a pan to bring out more flavour before use, then ground or left whole depending on the dish. Store the chillies in a cool, dry place away from direct sunlight, ideally in a sealed container after opening. Kept this way, the pods stay firm and retain their heat for longer, ready whenever a recipe calls for a proper chilli kick.
