Cumin seeds are small, ridged and dark, with a strong aroma that only builds once heat is applied. They are a store-cupboard essential across Indian, Middle Eastern and Mexican cooking, and a natural fit for British kitchens too. Use them whole for tempering, frying the seeds briefly in hot oil or ghee at the start of a dal or curry to release their flavour before adding onions and other spices. They also work well scattered into rice dishes, stirred through roasted vegetables, or added to a chilli con carne. For a finer flavour, dry-roast the seeds in a pan for a minute or two, then grind them and stir into spice mixes, marinades or homemade curry powder. Store the seeds in an airtight container, away from direct light and heat, to keep them at their best for longer. Buy little and often if you use cumin infrequently, as whole seeds hold their aroma far better than pre-ground versions once opened.
