This pack of cloves is a store cupboard staple that many households use gradually over several months, a pinch here and there rather than all at once. Cloves are the dried flower buds of a spice, dark brown, small and pointed, with a strong, warm, sweet-spicy aroma. A little goes a long way in most recipes. Cloves feature in both sweet and savoury cooking. They are pushed whole into a studded ham before roasting, added to mulled wine and mulled cider, and used in apple pies, chutneys and pickles. Ground or whole cloves also appear in curries, biryanis and spiced rice dishes, as well as in bread sauce served alongside a roast. For everyday use, add whole cloves early in cooking so their flavour has time to infuse, then remove them before serving if preferred. Ground cloves work well stirred into cakes, biscuits and spice mixes. Keep the pack sealed and stored in a cool, dark cupboard away from direct heat, as this helps the cloves keep their aroma and flavour for longer. A small spoon or measure is useful for portioning out ground cloves accurately when baking.
