Shelled Almonds

Shelled almonds turn golden and fragrant when toasted in a dry pan, releasing a deep, nutty aroma within minutes. Kept whole, they hold their bite through baking, roasting or gentle simmering, making them a reliable store-cupboard nut for both sweet and savoury cooking. Use them whole in Bakewell tart or frangipane, where they crisp nicely on top as the sponge bakes. Chop or flake them for scattering over green beans, roasted carrots or a winter salad, adding crunch without overpowering other flavours. They work equally well stirred through granola, folded into cake batters, or blitzed into a smooth paste for homemade marzipan or almond butter. For snacking, toast a handful in a dry pan with a pinch of salt until they colour slightly, then leave to cool before eating. They also make a useful addition to trail mixes alongside dried fruit. Store shelled almonds in an airtight container, away from direct light and heat, to keep them crisp and fresh. A cool, dry cupboard is ideal for everyday use, while a sealed container in the fridge will help them stay firm for longer if you buy in bulk. Bring them back to room temperature before toasting for the best flavour and colour.
