Dried jujube, also known as unaab, softens as it simmers, plumping up in hot water or milk. The skin wrinkles and turns tender, while the flesh keeps a light chew once cooled. These dried fruits are whole and reddish-brown, with a stone inside as is natural for jujube. They have a mild, slightly sweet taste that comes through best after soaking or simmering rather than eaten straight from the pack. At home, unaab is often added to warming drinks, simmered with water and a little sugar or honey to make a soothing tea. Many cooks add a handful to soups, stews or rice dishes for extra depth, or simmer them with other dried fruits and nuts for a fragrant compote. They also work well steeped in hot milk before bed. To use, rinse the jujubes first to remove any dust from drying. Simmer gently for a good while until soft, as they take longer to soften than fresher fruit.
