Regal Lemon Maderia is a dense, close-textured sponge cake with a firm, pale golden crust and a light lemon flavour running through it. The crumb is firm enough to slice cleanly, in the traditional Madeira style. This is a classic teatime bake. Cut into slices and serve with a cup of tea or coffee, or add a spoonful of jam and cream for a simple afternoon tea treat. It also works well as a base for a trifle, layered with fruit and custard. Slice with a sharp knife for neat, even pieces. Keep the cake in an airtight tin or container to help it stay fresh, and bring it back to room temperature before serving if it has been stored somewhere cool.
