Bikano Aloo Tikki is the one to reach for when a quick snack or starter is needed. Kept in the freezer, it is ready whenever unexpected guests arrive or a teatime bite is wanted in minutes. These are potato tikki, shaped and frozen for convenience. Cook from frozen by shallow frying until golden and hot through, or bake in the oven if you prefer less oil. They work well as a starter before a curry night, alongside chaat, or simply served on their own with a dip. Serve hot, straight from the pan, with tamarind or mint chutney on the side.
