Thaw the sheets fully before separating them, as this makes them easier to peel apart without tearing. Once thawed, cover any sheets you're not using straight away with a clean, damp cloth to stop them drying out while you work. Any filled parcels you don't cook immediately can be frozen again, ready to fry or bake straight from frozen when needed.
