Shezan Thai Sweet Chilli Sauce

Shezan Thai Sweet Chilli Sauce pours thick and glossy, clinging well to spring rolls, skewers and fishcakes rather than running off the plate. The colour is a warm amber-red, with flecks of chilli visible throughout. On the spoon it has a smooth, syrupy consistency that thins slightly when warmed through in a wok or pan. The flavour balances sugar and chilli, giving a sweet start with a gentle warming heat behind it. It works well as a dipping sauce for prawn crackers, spring rolls and chicken satay, and can be brushed over chicken thighs or salmon fillets before grilling for a sticky glaze. Stirred through a stir-fry towards the end of cooking, it coats vegetables and noodles without overpowering them. Use it straight from the bottle for dipping, or warm it gently in a small pan if a thinner glaze is needed for basting. Once opened, keep the bottle in the fridge and replace the cap tightly between uses to help the sauce stay fresh for longer. A squeeze bottle or small dish alongside a platter of dumplings or spring rolls makes for easy serving at the table.
