These digestives snap cleanly and turn soft and malty as soon as they meet a hot cup of tea, holding together for a good dunk before softening through. The wheaten crumb is firm enough to handle but breaks easily under a bite, giving that familiar sandy, slightly savoury texture digestives are known for. Use them as they come with a mug of tea or coffee, or crush them for a cheesecake base — they bind well with melted butter and press into a firm, even layer. They also work crumbled over fruit crumbles for extra crunch, or served alongside a cheese board in place of crackers. Keep the packet resealed once opened and store in a cool, dry cupboard away from direct sunlight. This keeps the biscuits crisp and stops them turning soft before you're ready to use them. A tightly sealed tin is a good option if you get through a packet slowly.
