Kewra flavouring is best known for lifting biryani, giving the rice its signature fragrance. It is a concentrated flavouring used in home baking and cooking, added in small amounts to bring a distinct floral aroma to dishes. In real kitchens, this flavouring goes beyond biryani. It is stirred into kheer and sheer khurma, added to sweet syrups for gulab jamun, and used in festive desserts where a floral note is wanted. A few drops are usually enough to flavour a whole pot of rice or a batch of dessert. Because it is so concentrated, kewra flavouring should be added sparingly and tasted as you go. Many cooks add it towards the end of cooking, once rice or milk has finished simmering, so the aroma stays fresh rather than cooking off. A little goes a long way, so measure carefully rather than pouring freely. Store the bottle upright in a cool, dark cupboard, away from direct sunlight and heat. Keep the cap tightly closed after each use to preserve the aroma. Used this way, one small bottle can flavour many batches of rice dishes, milk puddings and syrups over time.
